Mr. Smiley, the happy wooden spatula, wasn’t the only one excited about this chicken & many vegetable stir~fry!

After a long week with a lot of pain, I didn’t have enough motivation to cook again until almost the last day of the three~day weekend. And, with all the lovely replies to my last post—both here and on social media—I was inspired to make something simple, which I surprisingly hadn’t made in ages: stir~fry!

There’s no recipe to be had here…I sautéed a couple bags of frozen veggies (one bag of broccoli / cauliflower / carrot mix & one bag of green beans), then a couple of sliced chicken breasts, and finally stirred them together with a ginger soy marinade, and served it all over jasmine rice.

Sometimes even the simplest things can make the biggest difference…and sometimes, even the simple things can be a humbling experience.

To be honest, though, standing to cook even a simple stir~fry made my back hurt tremendously all over again. But finally, sitting down to enjoy it was so much better than all the instant foods or take~out in all of the world…and certainly better than any of them which I had eaten in the previous few days! Sometimes, there really is no substitute for a humble, home cooked meal.
